The five-second rule holds that food dropped on the floor stays safe to eat if it is picked up within five seconds. It is a common household belief, repeated in kitchens and cafeterias around the world. Scientific research has debunked it.

Bacteria transfer to food the moment it touches a contaminated surface. The rule's central error is treating contamination as a countdown and every surface as equivalent. Time is only one variable, and not the most important one. Moisture, surface type, and the organisms present matter more. A dropped piece of food can pick up bacteria whether it lands on tile, carpet, or stainless steel. The belief persists because it offers a convenient excuse to salvage a fallen snack, and because a dropped cracker rarely looks any different afterward.

A Rutgers University study found that bacteria attach to food almost immediately on contact. Longer contact increases the amount transferred, but plenty attach in the first instant, so the relationship is a gradient rather than a threshold. Dropping food for even a second onto a contaminated surface can pick up enough bacteria to pose a risk. The Rutgers study tested several surfaces and found that transfer occurred on all of them.

Moisture significantly increases the amount of transfer. Water acts as a bridge between the surface and the food, allowing bacteria to move more easily. Wet foods like watermelon pick up more bacteria than drier foods like bread or gummy candy. Transfer depends on the food's moisture, the surface's porosity, and the contact time. No window exists in which transfer is zero.

A larger dose of bacteria does not guarantee illness, but it is possible to get sick from dropped food. The organisms involved vary, and some are more likely than others to cause foodborne illness. For people with weakened immune systems, the consequences can be more severe. Experts recommend the safest option: when in doubt, toss it out.

Surface type changes the picture. Smooth, non-porous surfaces like tile or stainless steel transfer more bacteria to food than carpet does, because bacteria rest on top of a hard surface with nothing to trap them. Hard surfaces have no pores to absorb moisture, so water and bacteria remain on top where food can pick them up. Carpet absorbs moisture and holds it below the fibers, so less reaches the food. That does not make carpet safe; it changes the level of risk. For example, food dropped on tile picks up more bacteria than food dropped on carpet, even if the contact time is the same.

A floor is a reservoir, not a blank sheet. Shoes track in soil, food debris, and moisture, and those materials feed and shelter bacteria between cleanings. A surface can hold a large bacterial population while appearing spotless, which is why a quick look tells you nothing about what will transfer to your food.

Time still counts, but the gap between one second and five seconds is small next to the gap between carpet and tile.

Where you drop it matters. Hospital floors are high-risk settings; in those environments, discarding dropped food is especially advisable.

The risk is not the same for everyone. Young children, the elderly, pregnant women, and those with weakened immune systems face the most severe consequences, and the immune system may not mount an effective response. For a healthy adult, the odds of illness from a single dropped bite are low, but they are not zero.

Floors are not the only surface that carries bacteria. Cellphones, doorknobs, and hands harbor organisms that can end up on food, so washing hands before eating is always advised. If you handle food that touched the floor, wash your hands before touching anything else. Hands can pick up bacteria from surfaces and transfer them to food; washing with soap and water removes many of these organisms.
